Breville Smoking Gun Review

That rich barbecue flavour from infusing cuts of meat with the smoke from gently smouldering chips of hickory woodchips is difficult to replicate without a great big smokebox contraption. Or at least, it used to be.

Breville, one of Australia’s leading manufacturers of kitchen appliances, has brought the fine, delicate flavours of the smokehouse to the home kitchen in a small device that could make a big difference to your cooking. Instead of an outdoor smoker, which can be space and cost prohibitive for many, avid home chefs can choose to gently infuse smoke into almost anything using a small, simple device.

The Smoking Gun by Breville is a hand-held, heat-free way to get that smoky flavour without the fuss of traditional smoking techniques. Let’s explore how it works and what it can accomplish.

What is the Breville Smoking Gun?

Breville Smoking Gun

The Smoking Gun is a device which generates smoke from flavoured wood chips, for the purposes of flavouring food. It’s designed to replicate the effect of a smoking barbecue in a small appliance suitable for home kitchen use.

How does the Breville Smoking Gun work?

The Smoking Gun burns the wood chips in a contained chamber, while directing the smoke out through the silicon tube so that smoke is applied without heat. This makes it suitable for use on delicate food at any stage of preparation.

The removable burn chamber has a large opening so it’s easy to fill up, clean out, and change the filter. The silicon smoke tube is removable for cleaning and storage. The heavy, sturdy base keeps the Smoking Gun upright so that you can focus on directing the smoke. The steel mesh filter prevents actual burning material from escaping the burn chamber, allowing only smoke to escape.

Using the Smoking Gun involves simply loading it up with wood chips, setting them alight, and blowing the smoke into any kind of covered container. There are two settings to choose from – gentle and intense. You can apply smoke into a plastic bag, a container or bowl covered with plastic wrap, under an upside-down glass, into a blender, into a glass, or into a product being mixed with a stand mixer. The more you can contain the smoke inside the vessel with the food, the better it can infuse into the food. Allow the smoke to remain in contact with the food for at least a few minutes for the flavour to build up.

Only food-safe wood chips specifically designed for smoking food should be used. Different types of woods produce different flavours, with even more variety offered by woods infused with added flavours.

What can you do with the Breville Smoking Gun?

You can add a smoky flavour to pretty much anything – the limit is only your imagination and ingenuity. Traditional smokers only really work on foods that are cooked for a significant amount of time – think the difference between a steak and a burger patty. With the Smoking Gun, you can add that smoky barbecue flavour to all kinds of foods regardless of whether they’re even cooked.

Smoky flavours can mix well with drinks, sauces, meats, cheese, dips, popcorn, vegetables, and anything else that would taste great with a smoky touch. Smoke can be applied before or after cooking.

Just a few examples of foods that can pair well with the Smoking Gun include:

  • Bloody Mary cocktails
  • Cheese
  • Guacamole
  • Fresh seafood (e.g. salmon)
  • Bourbon
  • Hommus
  • Balsamic vinaigrette

It can also make for an impressive effect, to serve a dish topped with smoke – particularly if you serve it covered so you can experience a dramatic billowing of smoke when you lift the cover.

Does the Breville Smoking Gun require much maintenance?

Cleaning the Smoking Gun is relatively simple. Once cool, remove the burn chamber, tap out the contents, and give it a wash in warm soapy water. The burn chamber can also go in dishwasher. The mesh filter can be removed to clean with warm soapy water and a brush, as can the hose and tube ends. The main unit must not be immersed in water – it can be wiped over with a damp cloth.

Apart from keeping it cleaned regularly, there isn’t much to maintaining the Smoking Gun.

How much does the Breville Smoking Gun cost?

With a recommended price of $119.95, the Smoking Gun couldn’t quite be described as a cheap little kitchen tool. However, if you enjoy experimental cooking or showing off when you’re entertaining, it could be an appliance investment that’s right up your alley. The Smoking Gun is powered by four AA batteries, and comes with a 12 month replacement warranty.
